Firstly, cultivation of modern high-yielding varieties of rice and wheat, rather than exploitation of ‎edible legume seeds, which are much‏ ‏richer in micronutrients than cereal crops, particularly after ‎their grains have been undergone milling and/or polishing processes before they have being ‎consumed (Welch and Graham, 2004). Secondly, up-to-dated plant breeding has‏ ‏been ‎conventionally shifted toward high‏ ‏agronomic yield rather than the nutritional quality, especially ‎in the view of micronutrients composition and concentration (Peleg et al., 2008; Ficco et al., ‎‎2009).‎
