The internship activities were performed at Bizz, a dairy industry founded and still located in the city of Feira de Santana, in the state of Bahia. The internship covered the months of September and October 2020 and aimed to create the Programa de Autocontrole document and its implementation in the company. Those goals sought to comply with the requirements of the Portaria nº 144/2020 from ADAB – Bahia State Agricultural Defense Agency, which entered into force inon its publication date and will be applicable one year and a half later. Therefore, companies that process raw animal raw materials into food need to regulate themselvesself-regulate. To carry out the work plan, existing documents in the company were analyzed, including records of previous inspections, thestudying current laws were studied, and after holding a meeting with the owners and the manager, the need for Good Manufacturing Practices training before implementation was identified. After the training, a deep cleaning was carried out in the factory, and, finally, the records of the control elements required by ADAB were created.
